As a graduate from the Missouri State University Dietetics Program I feel very privileged to now be a part of the department as a faculty member. This is my 8th year teaching for the dietetics program and while I have taught many different courses my main courses include Food Selection and Preparation for Health, a Heart Healthy Cooking Series that students choose to take as an extra opportunity to learn information that is taught beyond our current curriculum, as well as the Nutrition Education and Communication course.
Part of my job is to facilitate some of the volunteer experiences for the students. Community agencies where our students have made a difference include Crosslines Food Pantry, Ozarks Food Harvest, Victory Mission, The Kitchen Clinic Inc., Missouri Hotel, The D.I.R.T. Project with Springfield Public Schools, among others.
The thing I love most about my job is that all of the courses I teach include a lab component. Why is this my favorite part, you ask? This allows me to watch students apply what we discuss in the classroom, enhance their learning, and improve their skills. Getting the opportunity to be a part of that learning process is a lot of fun and very rewarding!
