Today I met with Dr. Philpot to discuss my dietary challenges I will be facing while traveling. I cannot eat gluten (wheat, oats, barley, or rye) or lactose, so it should be an adventure in itself to find food to eat while in Asia. It is going to take some planning to make sure that I have everything that I need on the trip, but with Dr. Philpot’s help, I think that it shouldn’t be too difficult. Also a big thank you to Ms. Pham for setting up my meeting with him and for all of her help navigating this new challenge. Now I just need to type up my letter to customs, contact the airline about food, download a few apps to help me navigate the airports, and shop for food to bring along with me.
I did not expect this to be so much work but it definitely has been a learning experience. I like it because I know more of what to expect while I am in a new country and it has put my planning capabilities to the test.
After today, I feel prepared and ready for this trip and my worries have been put to ease. I now can worry more about learning where I am traveling and getting excited for this trip of a lifetime.

I’ve contacted the airline and requested gluten-free meals to be served on the plane for you already. I also have letter template you may use to draft your letter to customs.
