I’ve been researching food in Vietnam because I have no idea what to expect. I know that we are mostly on our own for eating while in Vietnam so I wanted to get a feel for what some options will be and see if I could find places people have suggested to eat at. https://migrationology.com/vietnamese-food-guide-saigon/
I found this website with 25 “must eat” dishes in Saigon. He also says what restaurants they can be found at. This was very helpful for me and I cannot wait to try local Vietnamese food!

Miranda,
I have also been looking up items to order and try while I am in each country. I am not normally a picky eater; however, some of the dishes that I have looked up as the must try foods look very interesting! I have been looking up recipes for my roommates to start trying just to get some idea of the foods over there. I did find a restaurant that is in Springfield that has authentic Vietnamese food that I am wanting to go try sometime soon! The restaurant is called Pho Kim and also there is a few others that are local too!
I am getting really excited! Only 48 days until we leave!
