Mountain Grove Cellars is making peach brandy this year. This process begins in the field where our field crew does a professional job pruning, spraying and maintaining the crop. When the peaches were ripe the crew pick what we needed. We put our peaches in the freezer and, after a few days, me and Karl took them out to thaw. Then we took all the pits out and put them in nalgene tanks. Karl then started the fermentation. By the end of this week we plan to begin distillation on the peaches. The peaches we use are very clean and fresh. The aroma of the peaches is very nice. Keeping this in mind – to start out with quality fruit – we hope the end product is great.
