Meet Betsy Whitehurst: Turning Passion for Nutrition into Community Impact

Betsy Whitehurst is currently a graduate student in the Nutrition and Dietetics Master’s Program at Missouri State University. She has combined a passion for helping others with dedication to her studies, creating experiences that extend far beyond the classroom.  Her focus is on community-based nutrition education, helping individuals gain practical and accessible knowledge to support healthier lives. Through hands-on experiences and academic growth, Betsy continues to build connections that support her goal of becoming a Registered Dietitian (RD) while promoting the health and well-being of others. 

A Passion for Community Nutrition: Her Decision to Join MO State’s Graduate Program 

Betsy’s path to Missouri State’s Nutrition and Dietetics Master’s Program grew from a passion for serving others and a commitment to community health. During her undergraduate years, she volunteered as an AmeriCorps member at the Bear Pantry, a campus food pantry supporting students and staff at Missouri State University. She considers that experience  as transformative, “I grew both personally and professionally, and it sparked a deep passion for providing accessible nutrition education to those in need,” she shared. She describes herself as caring, communicative, and optimistic – qualities that shape her studies and her community work. Her caring nature drives her to help others, communication skills help her connect with diverse groups, and optimism keeps her motivated and confident that positive change is possible. 

When exploring graduate programs, the Master of Science in Nutrition and Dietetics stood out for its focus on community-based nutrition education, which aligns with her values and goals. Since beginning the program, she has been able to deepen her knowledge, build meaningful connections, and take concrete steps toward her goal of becoming a Registered Dietitian (RD). “Pursuing a graduate degree at Missouri State provides me with the knowledge and skills to study and take the RD exam,” she mentioned.  

Finding Balance in Graduate Life 

Betsy says the most challenging part of her graduate program has been balancing the Dietetic Internship, graduate classes, and personal life. Managing a 40-hour workweek alongside coursework and social activities requires careful planning and focus. She found her way through it by staying organized and making time for herself, knowing that self-care is important for long-term success. Through this experience, Betsy discovered that persistence, planning, and balance aren’t just strategies; they’re essential tools for navigating the demands of graduate school while staying grounded and motivated. 

Making a Difference Through Community Work 

One of the moments that stands out most for Betsy came during her Personal Area of Concentration (PAC) project at Crossline’s Food Pantry. Over five weeks, she had the chance to share nutrition education not just with visitors but also with the pantry staff, applying what she had learned in ways that made a real impact on the community. “This was a very special opportunity to me because I not only helped fill a need in the community, but gave back to the people who fill those needs every day” she reflected.  

Support from Faculty Made the Journey Stronger 

Betsy says the Missouri State community has been a source of encouragement throughout her graduate studies, especially her professors in the Dietetics Department. Their guidance helped her navigate both the academic demands and the moments when she needed extra support. 

“They have always been so welcoming and there for me when I’ve needed a little extra support,” she shared. 

A Milestone That Still Makes Her Proud 

When Betsy thinks about her professional accomplishments, there is one experience that stands out above the rest: her work at the Bear Pantry. She shows a deep appreciation for the team and the service they provide. “The work they do there is truly amazing and supports our campus members in need. I look forward to working with them again through the Dietetics Teaching Kitchens Research Project,” she said.  

“MY PROUDEST PROFESSIONAL ACCOMPLISHMENT TO DATE HAS BEEN WORKING AT THE BEAR PANTRY. THE WORK THEY DO THERE IS TRULY AMAZING AND SUPPORTS OUR CAMPUS MEMBERS IN NEED.”

For her, that work wasn’t just a role, it was a place to contribute while growing her skills in nutrition and community engagement. 

Advice for Future #GradBears  

Looking back on her graduate journey, Betsy shares a message of encouragement for others considering a similar path. She acknowledges that graduate school can feel overwhelming at times, but she also emphasizes the importance of reconnecting with your “why.” 

“Take time to remind yourself of your purpose, why you started and what you’re working toward,” she said. “You’re pursuing something meaningful and impactful, something not everyone has the opportunity or courage to do. Hold onto that.”
