Garden Veggie Eggs in a Mug
Ingredients:
- 2 large eggs
- 2 tbsp. milk
- ¼ tsp. Italian seasoning
- salt
- ground black pepper
- ¼ c. fresh spinach leaves, chopped
- 2 tbsp. shredded Cheddar Cheese
- Fresh tomato, chopped, for serving
What You Do:
- Spray large mug with cooking spray.
- Add all ingredients into mug, whisk well!
- Cook in microwave for 1-2 minutes until done. Enjoy!
Mason Jar Salad
Ingredients:
- 5 oz. Mozzarella Balls
- ½ cup chickpeas or cooked penne chickpea pasta
- 1 cup cherry tomatoes
- ¼ cup pesto
- ½ cup spinach
- Mason jar/s
What You Do:
- Layer ingredients by starting with your wet ingredients first (pesto). Next, mozzarella, tomatoes, chickpeas or pasta, and spinach.
- When ready to serve, simply shake the jar, grab a fork and enjoy!
Peanut Butter Protein Mug Cake
Ingredients:
- 1 egg
- 1 Tbsp Peanut Butter
- 1 Tbsp sugar
- 1/8 tsp Baking Powder
What You Do:
- Whisk all ingredients into an oversized, microwave-safe mug until batter is smooth. Microwave for about 1 minute. Let cake cool a few minutes before eating.
