Students in the International Leadership and Training Center Ningxia University customized program gained an opportunity to study with students from the United States to learn about the farm to table movement gaining momentum in the US.
Students from China and the US studied the importance of local food production and sustainability in the classroom via lectures and discussions. They also had the opportunity to learn more about this trend by visiting local food producers.
Look at all these chickens
One field visit included Red Top Oven and Windy Ridge Farms. Red Top Oven produces small-batch specialty salsas, jams, jellies, and pickles. Students learned about their process for sourcing and developing their product line. Windy Ridge Farms is part of Vital Farms Eggs. Students were able to meet the farmers as well as the real stars, the chickens who produce the free-range eggs.
Students completed the course with an understanding of the larger movement of local food system sustainability. It was a great opportunity for students from the US and China to learn together and compare the food trends in their respective countries.
