When to harvest grapes?

The decision to harvest grapes includes consideration of grape cluster integrity, sugar level, pH, acid level, the style of wine or processed product intended for the grapes, weather, labor availability, and when the winery can take the grapes in for processing.

Lucas Snodgrass, Dr. Karl Wilker's graduate student, runs an acid/base titration in order to determine how much acid is present in the grape juice from berry samples collected from the vineyards.
