05/14/16 / 5/15/16. Jet lag in LAX
The PVNF presentation has been presented. We have traveled from Springfield to Dallas to LAX. As I sit in the LAX airport, waiting for the longest flight of my life, exhaustion overcomes me. I know that in a few extremely long hours, I will be able to sleep for an extended period of time, on e plane. A deep, possibly medicated sleep. I could t be more excited. But as I sit here, I fight off sleep with every ounce of my being. I woke up this morning after a mere 3 hours of sleep at 2:45. The night before, I got about the same amount of sleep. Therefore, I have gotten roughly six hours of sleep in the last 48 hours. My body is exhausted, my temper is short, and tension is high. However, amongst all of this, excitement runs through my veins as I await the biggest adventure of my life. So far. Tomorrow, I will be half way around the world. Literally. So, as I sit here, I try to remind myself that adventure is occurring and I should be thrilled.
5/16/16 Dim Sum
Today was the first full day in Saigon. I went to the post office and city market. Although I didn’t buy anything at the city market, I got the lay of the land so to speak and plan to return on Wednesday, 5/18. I hope to purchase a dress, some Buddhas and some coconut bowls. The real thing I want to blog about in regards to today is the dim sum I had for dinner. Tonight was my first time trying dim sum. It was delicious. Extremely tender, but not too sweet, the dim sum had the perfect amount of spice and veggie to compliment the seafood stuffed inside. I also had some seafood spring rolls. Seafood is s very important part of my diet here in Vietnam because I do not commonly eat pork or red meat. I am having a blast and can’t wait to see what the next adventure I come across is.
