January 15, 2015 by Natalie Allen

oats

Are you tired of your usual breakfast routine? Are you rushed and find yourself grabbing something quick to take on the go? Overnight oats may be the perfect solution for you! Simply throw all of the ingredients together the night before, let them make magic together overnight, and voila! When you’re running out the door in the morning you have a hearty and nutritious breakfast that will keep you full all morning long.

Peanut Butter Pumpkin Banana Overnight Oats – serves 1

Ingredients:
1/3 cup quick cooking oats
1/3 cup milk
1/3 cup yogurt (plain or vanilla)
1/3 cup canned pumpkin
1 tsp chia seeds
½ banana sliced
Sprinkle of cinnamon

Combine all ingredients together in a jar. Stir well to combine, or even put the lid on (tightly!) and give it a shake. Place in the refrigerator overnight and enjoy in the morning! You can eat it cold right out of the fridge or warm it in up the microwave for a few seconds.

Nutrition Information:  250 calories, 4 grams fat, 11 grams protein, 50 grams carbohydrate

Have fun with your overnight oats and experiment with different ingredients. Nuts, berries, chopped fruit, and granola…the opportunities are endless!
