Each semester, my Sports Nutrition class holds a potluck. We develop a cookbook, for future use with athletes and clients, and also vote on our favorite recipe.
The winner of the BMS 334 potluck for Spring 2014 is Robert Booker, football player at MSU. Robert developed this recipe himself and it was a hit!. These brownies are a great way to get your chocolate fix and they are also high in protein.
An athlete looking to gain weight may want to try this recipe. The brownies are especially delicious when paired with milk (a good post-workout recovery drink, milk is also high in protein and carbohydrates).
Chocolate Peanut Butter Protein Brownies
Ingredients
1/3 cup peanut butter
2/3 cup sugar
1 cup chocolate protein powder
1 cup milk
2 large eggs
4 tbsp. cocoa powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. vanilla extract
Directions
Preheat oven to 350 degrees. Grease 8×8 pan. Heat peanut butter slightly in a microwave safe dish for 30 seconds or until easy to mix. Mix peanut butter and sugar thoroughly. Add eggs, vanilla, and milk to peanut butter and sugar. Mix protein powder, cocoa powder, baking soda, and salt in a separate bowl. Combine all ingredients together. Pour in greased 8×8 pan. Bake for 25 minutes or until set.
