Chocolate Mousse with a Twist

May 10, 2016 by Natalie Allen

The semester is drawing to an end and the BMS 430 Sports Nutrition class voted for their favorite recipe from our "Training Table Potluck."  The winner was Melanie Morgan, dietetics major from Springfield.  Melanie recipe was chocolate mousse with a high protein, low fat "secret" ingredient.  After much speculation and many guesses, she revealed the mousse had pureed cottage … [Read more...] about Chocolate Mousse with a Twist

Quinoa for Athletes

December 8, 2015 by Natalie Allen

A Swimmer’s Strong Start

May 5, 2015 by Natalie Allen

For our Sports Nutrition "Training Table" recipe contest in BMS 430, we chose our winner....Shannon Myer, dietetics major, and MSU swimmer.  Shannon's recipe was a favorite among students.  This easy-to-prepare "muffin" is high in protein and can be made ahead of time.  Many of the athletes I work with, struggle to eat breakfast and this is an excellent … [Read more...] about A Swimmer’s Strong Start
