The first mushrooms were harvested yesterday, August 19. We are harvesting the clump when the edge of the largest mushroom changes from concave (curled downward) to convex (beginning to curl upward or not convex anymore). Once we harvest some more, we will see how they taste in recipes!!

The oyster mushroom clump is harvested once the edge of the largest mushroom in the group changes from concavw (curling downward) to convex.
